A healthy chicken sausage skillet recipe

Did you ever just look into your fridge and find a bunch of “stuff” and decide to just put it all together and see what comes out? Are you sometimes surprised with how amazing the dish turns out to taste? That is what happened the other day when I looked into my refrigerator and saw a package of Trader Joe’s Sun Dried Tomato Chicken Sausage and thought “what can I do with this?” I had never bought their chicken sausage before, but after looking at the macros I realized they were a good idea to pick up and try. I knew I didn’t want to eat them alone just by themselves, so I got a bit creative in the kitchen with a few ingredients.

I grabbed some fresh baby spinach which always cooks really nicely in a skillet. I usually just buy the organic salad spinach and it gets super soft when you cook it. I added some freshly diced garlic, dice organic tomato and white kidney beans. In a skillet that was sprayed with organic olive oil I let this sizzle for about 20 minutes. It turned out amazing and was so easy to make and could be reheated for lunch the next day. This is a great way to get some more fiber (veggies) into your meals without loading up on carbs.

The chicken sausage packages are in the meat section at Trader Joe’s and each link is 110 calories but it is also low in fat and high in protein. It’s also low in carbs so these make for a healthy option to get some protein in without a lot of calories and carbs. They come in a variety of flavors and seasonings so there are a few options you can go with for your dishes.
