A Healthy Zucchini and Grass Fed Beef Chili Recipe

For anyone following a high protein / low carb diet this is the perfect chili recipe for you. Me and my husband this week started a ketogenic diet (protein & fats but very few carbs) so many of our food choices which were always healthy have to be adjusted a bit to remove carbs and also remove some vegetables and sub for others that have lower carb index. I will do a separate blog post all about the keto diet we are following. This dish came out amazing and sure to please, and even if you’re not following a low carb diet you will love this meal anyway.

Tonight’s chili was made with a few simple ingredients:

Shredded mozzarella cheese, organic grass fed beef, organic chicken broth, taco mix and shredded zucchini. This is very filling meal and so easy to make. My current diet is focusing on a ton of fats and protein so chili is a great idea for lunch or dinner. To make:

Using a cheese grader I diced up my zucchini to a fine shred. I used 2 full zucchinis and added them to a medium heat pan that had been sprayed with coconut oil.

After that I added in the grass fed ground beef from Trader Joe’s which I love. I used one full packet for this meal for me and my husband. I cook that until the meat is no longer pink and then transfer into bowls.

Now it’s time to add the cheese so I use mozzarella and top it and let it sit and melt and then enjoy!

This is a ketogenic diet friendly meal. The zucchini is a low carb index vegetable, the grass fed beef is high in protein, zero carbs and good amount of fats and the cheese is zero carbs and fats as well. Avoid processed cheese and go with full fat or mozzarella or goat cheese. This is so filling and delicious and a perfect dinner option.
