Sunday Meal Prep Lunch Ideas – Turkey Meatballs, Squash and Brown Rice

Today’s meal prep Sunday was mainly focused on getting my healthy lunches done for the busy work week ahead. Not only does doing meal prep help to keep me on track with my diet and macros, but it also saves me a ton of money too. The average lunch take out near my office will usually run me $10-$15 and that’s if I get Chipotle and a water. If I want to go for an actual meal with co-worker it will likely cost me around $20-$25 with tip. Lunch for five days with my recipe below cost me around $20 total so that’s a huge savings. Not only does it save money but I am able to know exactly what is in my food and how it was cooked and seasoned.

This week’s meal prepped lunch is lean turkey meatball muffins, diced green squash and brown rice. This covers all the bases; lean protein, healthy carb, high fiber. As for my meal prep containers for lunch I use these 2 compartment meal prep containers from Amazon.

To make my meatball muffins I used the following ingredients:

I used 2 packages of lean ground turkey and that yielded 12 very large meatball muffins. I used 1 tbsp of organic ketchup, spicy brown mustard, organic roasted garlic, 1 brown cage free egg, 1/3 cup of low sodium chicken broth, 1/2 diced onion, 1/3 cup of organic rolled oats, himalayan pink sea salt, basil and roasted garlic and red bell pepper seasonings. I sprayed a large muffin tin with coconut oil spray and pre heated the oven at 385 degrees. These will take around 35 minutes to bake in the oven. They will come out slightly light in color, not dark brown like beef meatballs. Once these are all cooked I let them cool and then they are ready to enjoy! You can eat these hot or cold – they are the perfect high protein treat! For lunch I also made brown rice which I put in each container and used a little less than 1/2 cup for each lunch.

The next part of my lunch is my green vegetable which has currently been a ton of green squash – I’ve become obsessed with making this in the oven. I use some roasted garlic and red bell pepper seasoning, bragg’s liquid aminos and trader joe’s coconut oil spray. I chop these up into small pieces and bake them in the oven along with my meatballs. They come out tasting delicious and are a great source of fiber in my lunch.

The brown rice is my healthy carb and I do a little less than 1/2 cup and buy the precooked Trader Joe’s brown rice. I put that in a bowl and place in the microwave for :90 and then use a measuring cup and put it in each meal prep container. The brown rice is quick and easy and gives me fuel during the work day.

Lastly I made a batch of egg white protein muffins for quick snacks or breakfast. I only made one batch of six because these tend to get a bit gross after a day or two so I eat them fresh. I use egg whites, onion, diced up grilled chicken and spinach. I use some salt and pepper seasoning and put them in the oven for about 25 minutes. These are great and a high protein snack or breakfast on the go and are so easy to make in a muffin tin. You can add in whatever vegetables you like to make it really filling and high in protein and fiber.

My other meals for the week include:

Kill Cliff Cold Brew Coffee & 1 scoop of NutriWhey Vanilla Protein powder (shake)

1/3 cup of organic rolled oats, 1 tbs of organic crunchy peanut butter, cinnamon and 1/2 scoop of Protein Energy Cinnamon Bun Flavored protein powder (breakfast)

Organic Gala Apple for snack

Celery and carrots for snack

Ezekiel Cinnamon Raisin Toast with 1 tbsp of D’s Naturals Almond Butter (optional snack)

1 cup no fat cottage cheese, handful of almonds, 1/2 scoop of peanut butter syntha 6 protein and some organic granola (night time snack)
