Recipe: Atlantic Salmon and Vegetable Stir Fry

If you love stir fry, but not all the loaded calories with the sauces, try this recipe out for size

Sometimes you are just in the mood for some stir fry, but the truth is so many of these dishes are loaded with sodium and calories simply because of the sauces used to make them. Whether its a terrayaki or a soy sauce they can add on the calories quick, that’s why I have opted for a healthier version and now I am hooked! Recently I blogged about a new product I purchased and that I am loving in my recipes: Bragg’s Liquid Aminos Soy Sauce Alternative. It’s great for a variety of health benefits, like 16 essential and non-essential amino acids, but it is also calorie free and low sodium. At first I used it on my chicken stir fry but this past weekend I wanted to try it out on fish, like salmon, and the results were delicious!

I bought a pound and a half of Atlantic salmon fillet from my local grocery store seafood section. I usually order it with the skin on and let the skin get crispy during cooking and just remove it. I put the salmon in a baking pan that was coated with some coconut oil spray. I put my oven on 350 degrees and made a great vegetable medley. I get the vegetables fresh and then chop them up. This time I used white onion, bell peppers, green peppers, sugar snap peas and some green beans. I marinated it all in some of the Liquid Aminos and then popped it in the over for 25 minutes.

We love salmon in our house so I always get up to two pounds of it, it never goes to waste and it always tastes delicious. I let it all cook in the oven and then I transferred it all to a skillet. This helps to get the vegetables nice and coated and it also lets me break up the salmon into pieces into the skillet and then cook it all together.

What I love about this sauce is it tastes delicious and a little goes a long way. I could eat cups upon cups of the stir fry vegetables all by themselves, it comes out tasting so good. You can put any type of meat in here that you like, but salmon and chicken have both worked really well for me with this mix.

I highly recommend trying this out as a way to get even more veggies into your diet. It really satisfies those cravings I get sometimes for chinese food without any of the guilt.
