Strawberry Whey Protein Cupcake Recipe

There are so many ways to use Whey Protein in baking and recipes, yet so many people only use it for protein shakes. The truth is, you can use protein powder to make everything from cupcakes to waffles to pancakes! With such a high protein profile, low fat and low carbs it is a great idea to start getting creative with your tub of protein and turn it into desserts and other tasty treats. It’s a great way to satisfy a sweet tooth with out jeopardizing your diet and weight loss goals. It is also great for those of of you (like me) who are weight training and are on a high protein diet to maintain and grow lean muscle mass. True Athlete Natural Whey Protein recently came out with a Strawberry flavor and once I got my hands on it I wanted to try using it for a Strawberry Protein Cupcake Recipe! How delicious does a strawberry cupcake sound?

The recipe is rather easy to make and only takes about 15 minutes. When it comes to baking with protein powder the cooking time is cut in more than half since it will be way to dry if you leave them in the over for longer than 10 minutes.

What you will need is: 

3 scoops of Strawberry protein powder (click here)
a mixing bowl and spoon
1 cup of organic oats blended up to a fine powder (I did this in my Nutribullet)
1/2 cup of almond milk
9 tbsp of egg whites
cinnamon topping
no salt cottage cheese (1 cup)
1 packet of Pro Pudding in Vanilla Flavor (click here)
Cupcake tins and the baking pan

IMG_3667.JPGTo make you will preheat your oven at 350 degrees. Grab your cupcake baking sheet and add the cupcake tins.

In a mixing bowl put the protein powder, egg whites, almond milk and oats. Mix it well, it will be a bit thick but that’s expected.

Pour the mixture into the cupcake tins about 3/4 of the way full – leave room for the cupcakes to grow and expand so they don’t overflow while cooking.

Cook for about 10 minutes in the oven.

For the frosting:

In your Nutribullet put 1 cup of cottage cheese, 1 packet of the Pro Pudding and mix. It will get very thick which is great for a frosting.

Remove cupcakes from the oven. Let them cool slightly then apply the frosting.

Dash with cinnamon on top. ENJOY!

 Below are the macros and the calories for one cupcake. This recipes yields 12 mini cupcakes which are low calorie and a good source of protein. They came out delicious and are great a snack or post workout food.
