My easy recipe for delicious homemade chicken parmigiana

 Nothing says Sunday dinner like a fresh batch of chicken parm (you taste so good!)

IMG_2993-0.JPG When people think of Sunday dinner, at least in my family, they think of pasta, bread, chicken parm or some other cheesy delicious dish. I grew up eating this way every Sunday, just something my family has always done. Yes I am half Italian so there was always lots of food and pasta to be had. Now as an adult I don’t eat past very often at all, but there are surely some days I really crave some ooey gooey chicken parmigiana. So I decided to try to find a way to make this a bit healthier, even though let’s face it: it contains bread crumbs, cheese and oil but I still wanted to try.

First thing you need to do is get some great chicken breasts, thin ones, usually I always go with an all natural, antibiotic free pack. In one bowl you will whisk up 3 eggs with the yolk and one other container holds the whole wheat bread crumbs. In a skillet you will put some extra virgin olive oil on a low temperature and some garlic. Take your chicken breast or chicken cutlet and dip it completely into the egg, then dip it into the bread crumbs to coat. The bread crumbs will stick to the egg and then you place them into the hot oil in the skillet to cook.

Be careful with placing the cutlet into the oil, it will be hot and may splatter so keep a distance. You will also want to preheat your oven to 375 degrees. You will only cook the cutlet in the skillet half way, not completely cook it. The last half of the cooking is going to happen in the oven.

Let the cutlet or chicken breast cook only a few minutes on each side. You don’t want it to cook completely through. Have a baking tray ready with some marinara sauce, you will then transfer the chicken to that pan to cook for the remainder of the time in the oven. This helps to keep the chicken moist and not dry it out.

I like to use the Trader Joe’s Lite Shredded Mozzarella Cheese for the top of my chicken parm. I sprinkle that on right before I put the chicken in the oven. You will want to cook the chicken in the oven for about 15-20 minutes total. If you are feeling like you want to splurge a bit you can also slice some fresh mozzarella from your local Italian deli, you can’t beat fresh MOZZ!

This is what it will look like right before you place it into the oven. When it comes out you will be ready to dive right in! I always say it’s okay to have one cheat meal a week, not a full on cheat DAY, but a cheat meal. Even though this is not really that bad for you, I normally don’t eat a lot of cheese or bread crumbs so this was great paired with a nice salad and a glass of red wine. Cheers!
