Lean high protein turkey meatball muffin recipe – low carb and low fat

Every week I make a batch of meatballs – they are delicious, fast, easy and can be a great in between meal snack or made into a full meal on their own. Each time I make them I change them up a bit; whether I use a new vegetable in them or if I use a mix of ground meats – keeping the recipe fresh always ensures that I won’t get bored of this fun dish. This week I bought a cute, mini muffin tin from TJ Maxx and knew it would be fun to make my weekly batch of high protein meatballs in these instead of my usual flat baking tray. The reason I loved using the muffin tin is it make all the muffins the same size and they are miniature which means you can pop them in your mouth and go! For every 2 minis that equals 1 regular sized meatball. YUM!

For this week’s meatball muffins I used the following ingredients:

– 2 packages of 99% lean ground turkey from Stop & Shop

– a handful of Nature’s Promise Organic Oats

– Mrs. Dash Original Seasoning

– Italian Seasoning

– 1 whole egg

– 3 tbsp Walden Farms Ketchup

– 3 tbsp Classic Yellow Mustard

– 1 cup of frozen chopped spinach

– 1/2 cup of chopped white or yellow onion

When it comes to making these high protein meatballs I always skip the bread crumbs. Usually I will just swap them out for oats instead to help take out some of the moisture but give them some more density. Oats also help you to feel full longer so I usually go with oats instead (which also keeps these very low carb!) If I do make these with bread crumbs I usually with use just a handful of the Whole Wheat Seasoned ones as you see below (but I didn’t use them this recipe, they just happened to be on the counter when I took this photo.)

Another thing you can do when you make meatballs like this is put some vegetables in them. Even if your kids or family don’t like vegetables, by chopping them up and hiding them inside the meatballs they will never taste them! This week I used spinach but I’ve also used carrots, asparagus and kale and they all tasted delicious! Leafy greens are a great source of fiber so I usually opt for them when I can in meatballs.

These are a great recipe if you are aiming to eat a high protein, low carb, low fat meal or snack.

Nutritional Information:

Each mini meatball muffin gives you 17 grams of protein, only 9 grams of carbs and 3 grams of fat.

That is for a 2 ounce meatball – I usually eat 2-3 for lunch or snacks and am full from that!
