Video: Sunday Meal Prep Shopping and RECIPES

Hey guys, it’s been a while since I did an updated “Shop & Cook with me” style vlog video and a follow up blog post. I wanted to share what my Meal Prep looked like this week, where I shopped and some of the meals I will be making. As mentioned in the video below I share the 2 grocery stores I stopped at, items I picked up and how I make some tasty, basic, healthy recipes for my work day meals, snacks and also quick breakfasts and dinners. It’s so nice to be in the swing of things with my food prep and workouts lately so I wanted to get back into the habit of filming videos and sharing my recipes.

Items I purchased today include:
liquid egg whites, half & half, unsweetened almond milk, shrimp, natural chicken breasts and tenderloins, broccoli, brussel sprouts, peppers, lettuce, goat cheese, garlic, turkey bacon, kale slaw, watermelon, organic oatmeal, spinach and a few others.
I also used a few items I already had purchased but did not buy today including chicken thighs, other seasonings, olive oil, protein powder.

Chicken Recipes I made:

I baked both of my chicken recipes this day. If it had been nicer out I may have made these out on the grill but today we stayed indoors. The thin chicken breasts were marinated with Goya Adobo seasoning and olive oil. Then I cut them up to make small cubes for my meals. I also took chicken tenderloins and marinated them with some jerk chicken marinade. Both turned out delicious!

I made a huge batch of broccoli and brussel sprouts using some olive oil, chicken broth, garlic and seasonings. They both came out soft and tasty. I also made some slow cooker chicken later that day using the McCormmick spice Tomato, Garlic and Basil which is my favorite. I put a bit of olive oil, broth, balsamic vinegar and the packet of seasoning on low heat for five hours. I also got a big watermelon and diced that up for a quick, refreshing snack.

To transport my meals and snack, and to keep them fresh and cool all day long while at work, I use the 6 Pack Fitness Bag Mini. I keep it with me in my office so that I don’t have to try to find room in the office fridge, and then I can grab anything I need on the go or when I have no time to have a sit down lunch. This is a lifesaver, chic and takes up very little space.

For my protein shakes, which I am adding back into my routine, I use Muscle Milk Chocolate or Vega One French Vanilla. I buy organic, fresh berries and put them in the freezer. This makes it easy to make shakes, prevents the berries from going back and makes the shake super cold. I use unsweetened vanilla almond milk, ice, water, a scoop of protein and then some berries in my NutriBullet.

My lunches are the most important meal prep item for me. I can do quick, healthy snacks in between and I make breakfast when I have time. Breakfast is either a protein shake to go or a egg omelet with mozzarella cheese, turkey bacon and spinach. For my coffee I use only cream or half and half (no sugar, unlike any regular milk like skim or 2%), and packets of stevia which I have in my purse at all times.

Overall this entire day of shopping cost me around $125 and saves me a ton of time and guess work during the work week. It is also enough to feed two people and with left over items for dinner during the week!
