Slow Cooker Healthy BBQ Chicken Dinner Recipe

Slow cooker and crock pot season is finally here! It’s my all time favorite kitchen appliance and one that I recommend everyone buy for themselves or put on a gift registry. I got mine for my bridal shower and it has been used so many times since my wedding. You can get one for under $50 and they come in a variety of sizes depending on how much you need to cook. If you have a big family you may want one that is pretty large but if you are cooking for yourself or just two people a medium sized one will do just fine. Mine is the Cuisinart Slow Cooker and it’s so easy to use and fool proof.

A lot of people get nervous using a crock pot or slow cooker since you leave it on while you are not paying attention or go to work. The first time I used it I put my food in before I left for the office and came back during lunch because I was so scared I was going to burn the house down, but rest assured that will not happen. You just have to be sure to set it to the right amount of time and once the time is up the slow cooker will switch over to a simmer or low mode to just keep the food warm but not over cook it.

Ingredients needed:

1 cup natural chicken broth

Olive oil spray or olive oil

Pink Himalayan sea salt

1 large package of organic chicken thighs

Oh My Spice Sweet and Savory seasoning

1 packet of bbq pulled pork seasoning

Today’s dinner is a great option for meal prep or just a delicious meal anytime. I love BBQ
chicken but the problem is most of the marinades or sauces are loaded with sugar and carbs. Since I follow a relatively low carb diet I can’t use those, so this recipe skips the marinade and goes right for seasonings. All of these items are found in your grocery store or online. For this recipe I used organic chicken thighs which already came skinless which is a great help in preparing. I did however take some time to cut off some extra fat on the chicken to make it a bit more lean. I usually cook meals with chicken breasts which are very lean, but thighs are a bit darker meat but cooks really well in a slow cooker. Once the chicken was trimmed up nicely it was time to get my slow cooker ready.

In the slow cooker put your chicken broth, spray it with some olive oil and then add 2 tbsp of olive oil. This will ensure your chicken is nice and soft and not dry. It also keeps the chicken slightly coated to add even more flavor while it cooks. Add in your chicken thighs and then top with the packet of BBQ pulled pork seasoning and then top with some Oh My Spice Sweet & Savory. I love their seasonings and have them all in my pantry to add to all my meal prep dishes. Yes the packet says pork, which we aren’t making, but it works perfect for all meats. Make sure after you add the seasoning that you move the chicken around to coat the top and bottom like you see in the image here. The chicken should not be floating in the broth, just half way coated.

You will put the slow cooker on high for 3.5 hours or low for 5.5 which will get the chicken nice and soft and it will literally fall apart when you eat it. While that is cooking I prepared my vegetable side dishes for the night. I cut up one zucchini and one squash which I have been loving lately. I added them both to a skillet with some olive oil and Oh My Spice Garlic Lovers seasoning. When the chicken is almost done you can simmer these on low until they are soft and tasty.

I also love making baked vegetables too so tonight I prepared some broccoli florets and cauliflower. Once they are chopped up I sprayed a small baking tin and put the oven at 385 degrees. I added some Oh My Spice Garlic Lovers on these too and dusted some Bragg’s Nutritional Yeast for a cheesy flavor. This baked in the oven for 25 minutes and I would occasionally toss the vegetables to make sure they don’t dry out.

There’s nothing better than vegetables that you enjoy eating so I highly suggest getting seasonings that make them taste delicious. I don’t eat carbs at night time with dinner in case you are wondering where the carbs are – they don’t exist in my night time meals. I eat very few carbs and if I eat any they are before or for lunch time.

Once everything was done and my chicken was ready it was time to enjoy! Everything turned out amazing and was so good. I will be making lots of slow cooker recipes so stay tuned for more of those.
