Soyfoods Month Healthy Edamame Salad Recipe

April is National Soy Foods Month and a great time to find healthy ways to add soy ingredients into your favorite meals and dishes. One soy food I love is edamame; both shelled and de-shelled both for snacking and in salads. Today I wanted to make a hearty salad to enjoy and used a ton of great, healthy ingredients including some edamame. I picked up mostly everything in this salad from my local Trader Joe’s. In my salad today I used organic cucumber slices, sun dried tomato, shredded carrots, red bell peppers, red oak leaf lettuce and then as a protein source I chopped up some pre-cooked grilled chicken. For my salad dressing I used low fat balsamic vinegarette and 2 tbsp of organic apple cider vinegar. You can heat up the chicken to warm it a bit or just have it cold like I did. The salad turned out delicious and was very filling since all of the ingredients are high in fiber. The freshness was so tasty and perfect for lunch or as a side salad for dinner time.

Edamame is a great source of fiber and protein and this edamame is so easy to toss into a lot of meals. I also love edamame in a bean salad since it is best served cold. You can also mash it up in a food processor and make your own edamame hummus. It’s a very versatile food and it’s great to toss into so many dishes. I love how crunchy this salad turned out paired with so many vegetables. I usually grab a ton of healthy items from my fridge and make a fun mix like this. Salads with lots of vegetables help to keep you full and salads like this are easy, fast and make it a great option to take to work for lunch.

The sun dried tomato adds a delicious flavor but if you don’t like them you can always slice up an organic roma tomato which I love too. The apple cider vinegar is great to toss into your salad since it has so many great nutritional benefits including helping with healthy digestion. I keep a bottle of this in my house at all times for use in cooking as well as for a hair cleanse weekly to remove build up and you can even add it to a betanite clay to make an at home face mask. The Trader Joe’s fat free balsamic dressing is great for salads and you can use it for marinating chicken as well.

It’s a great month to find ways to add soy products to your meal prep. Where you use edamame or tofu soy foods especially non-gmo ones are a great fiber and protein ingredient. I don’t cook with tofu much but there are many products now using soy from non-gmo sources.
