Red Velvet Protein Munchkins Recipe

If there is one flavor that I love but can never find enough baking ingredients with it that are healthy, it’s Red Velvet. I was very excited to get my hands on the brand new flavor of protein peanut spread from Buff Bake in Red Velvet. Once I tried this I knew I had to come up with a fun recipe (or a few) to add this to. I can’t remember the last time I had an actual donut, it has to be a few years – so it was a great opportunity to try to make a high protein, healthy version of mini donuts or munchkins today. Since you are going to bake these little darlings they come out being a little crunchy on the outside which reminds me of the texture of the sugar coated munchkins. They are not meant to be gooey, but more crispy which I was pleasantly surprised about once these came out of the oven.

1 large organic cage free egg

2 drops of Vanilla Cream Sweetener

1/3 cup of unsweetened apple sauce

4 tbsp of Buff Bake Red Velvet Protein Spread

4 drops of liquid stevia

1 scoop of Nutriforce NutriWhey Belgian Chocolate Protein Powder

1/2 cup of coconut flour

3/4 cup of Bob’s Red Mill Rolled Oats

1/2 tsp baking powder (Rumford’s Low Sodium)

2 tsp Cacao Nibs

1/2 tsp sea salt

1/2 cup of unsweetened almond milk

Preheat Oven to 385 degrees and use parchment paper to line a baking tray. Once you mix all of the ingredients together you will roll the mixture into small balls of 18. Make sure to roll them and pack the ingredients and then place them in the oven for 25 minutes. Once the time is up, remove the tray and allow the munchkins to cool and then enjoy!

I liked pairing the Chocolate Belgian Protein with the Red Velvet for a chocolate/red velvet taste. I also like the NutriWhey protein since it does not use any artificial colors, sweeteners or flavors. It is one of the few protein powders I have found with a great profile without all of the fake colors and sweeteners. The Buff Bake Red Velvet spread has chia and flax in it which is a nice bonus and their spreads are also all natural. The rolled oats help to keep you feeling full and the Organic Bob’s Red Mill Rolled Oats I use are organic. Let me know if you make these and I hope you love them as much as I do!
