Peanut Butter Protein and Cacao Nib Muffin Recipe

A tasty recipe for muffins made with protein powder, peanut butter and some other good for you ingredients. Swap your morning muffin for one of these. Most of the muffins you find in the convenience store are probably one of the worst things you can grab on the go. Most are over 400 calories and loaded with processed ingredients. They will give you a spike in insulin and leave you tired and crabby soon after. They also have no real protein content, which is where this recipe comes in handy.

Ingredients needed to make 12 mini muffins and 4 large size, but feel free to use whatever tray you like for the size you prefer:

4 table spoons of Buff Bake Chocolate Chip protein peanut butter spread

3/4 cup of Red Mill organic rolled oats

1 tea spoon of Rumford low sodium baking powder

4 scoops of BSN Syntha-6 Peanut Butter Cookie protein powder

1/4 cup of organic skim milk or unsweetened almond milk

1/4 cup of water

1 organic mashed banana

3 table spoons of cacao nibs

You’ll notice when possible I always use organic ingredients, which while some may cost a bit more money, I’d rather put my dollars into the food that nourishes my body than a new pair of shoes. I also like to buy all natural ingredients for my cookie and natural sweeteners instead of anything using aspartame. The Buff Bake spreads are great food cooking as they are really smooth and taste delicious since they have such a variety of flavors.

The peanut butter cookie Syntha-6 is great if you are a peanut butter lover like me who grew up on mom making peanut butter cookies. Of course those were surely not healthy, this is a great swap. I even like to put this protein powder in a plain greek yogurt cup for a peanut butter flavored mousse!

To make you will preheat your over to 385. Once you put your mixture into your sprayed muffin tins, I use the Trader Joe’s Olive Oil Spray for mine, you will put them in for 10 minutes. That is all the time  you need for these to cook and rise perfectly.

Once the ten minutes is up, remove and take out of the tin and place on a plate to cool. These are great for the kids to just pop in their mouth on the way out the door to play or for us adults to grab with your coffee as you run out the door to work.

I made these in two sizes so that if it’s for more of a meal replacement I would grab for the larger ones. If you want to warm them up a bit before eating you can just pop them into the microwave for a few seconds.
