It’s just another melon Monday – watermelon and pineapples

 I woke up this morning and realized that spring was finally here! The sun was shining, I didn’t need to run outside with the dog and throw on a winter coat, and I even got a bit of sun burn driving around with my sun roof open this weekend. When the weather starts to get warm one of my favorite things to eat is WATERMELON!!!! It’s almost like the unofficial right of passage from winter to spring when watermelon is being sold in the store. Watermelon is amazing, it taste great, is loaded with water and helps me to crave a sweet tooth when I need it.

Whenever I buy watermelon I usually bring a small tupperware container of it with me to work to eat mid day as a snack. Watermelons are mostly water — about 92 percent — but this refreshing fruit is soaked with nutrients. Each juicy bite has significant levels of vitamins A, B6 and C, lots of lycopene, antioxidants and amino acids. It helps me to quench my this and have a snack that helps me to take in more water per day. I also LOVE pineapples. Usually I will just buy them pre-cut or pre-sliced at the local farmers market. Pineapples are great to aid in digestion and so sometimes I like to have a slice or two at the end of a meal. I also enjoy putting some cubes of pineapple in my ice water to give it a hint of sweet flavor without the need for a packet of artificially sweetened drink mix.

Many people have been taught to be afraid of fruit…”oh my god too much sugar!” but honestly I don’t even pay attention to that. Watermelon and pineapple are my two favorite fruits and now that it is warmer out I pack them with me to work everyday!
