Cornish Hens – how to bake them in the oven with vegetables

Cornish hens are not something I have made often, but I did want to try to make something in my oven that would take a little longer and taste delicious. As a child my grandmother used to make stuffed cornish hens all the time, I enjoyed them, but personally I am not a big fan of eating meat off of the bone so for this recipe at the end I took all the white meat off the hens and put it back in the oven to cook a bit longer. I did not put any stuffing in my hens when I cooked them, though many people do stuff them with rice or other fillings.

Preheat your oven to 325 degrees. While you have that getting ready unwrap your hens and cleanse then with a bit of cold water. Get a baking wear dish and fill it above 1/2 inch with low sodium vegetable both.

Rub the hens with some of the vegetable broth and any seasonings you prefer. I used some sea salt, Mrs. Dash Italian seasoning and black pepper. Make sure to also put the broth and seasonings inside the hen as well and remove the innards which usually come in a plastic bag inside that you can remove easily.

Let your hens bake for an hour, then remove them and then take all of the meat off and put back into the same dish and add your vegetables. I used some multi colored beans and some white potatoes and carrots.

Put this dish back into the oven for another 15-20 minutes and then serve. The flavor of this is so delicious and it is a great recipe when you have the time to let the hens bake.
