Game Day Snack Recipe – Brocolli, Salami and Cheese Roll Up Bites

Every Sunday we gather around great food, cold beers and a big television to cheer on our favorite football teams. If you want to spice up your food offerings for your next day of hosting Sunday football or the Super Bowl, try this fast recipe to satisfy their hunger between quarters.

Ingredients you need to pick up on your next grocery store trip include:

– organic brocolli florets (or a head of brocolli you can chop up finely)

– low fat shredded cheese (I went with Weight Watchers four cheese italian cheese blend)

– Pillsbury Thin Pizza Crust Dough (they also have an artisan whole wheat which I wish they had but since they didn’t I went with this one)

– Mrs. Dash No Sodium Seasoning

– Citterio Salami or you can also go with Applegate as well

– Extra Virgin Olive Oil Spray

– Baking Sheet

Preheat your over to 400 degrees before you begin.

Put your brocolli into a microwavable bowl or dish and cut the florets down to finely chopped pieces. Pour in about 1/4 cup of organic low sodium chicken broth and shake on some Mrs. Dash seasoning then pop in microwave for 5 minutes to soften up the brocolli.

Spray your baking sheet with organic extra virgin olive oil so the crust does not stick to the pan. Open up the can of dough and divide it up into small circular pieces and place on the pan. Spread it out but don’t pull or there will be holes in the dough. You’re going to want to put the ingredients in the middle like a little cup.

You can use any type of shredded cheese. I went with this italian blend because I like mozzarella but it will also work with mexican blend cheese as well.

Put a small patch of cheese on each of the dough circles. Push the cheese down to stick to the dough.

Take the salami and then cut it up into small strips or pieces. You can use a pair of scissors to do this very quickly.

Add the salami as the second layer to the tiny dough balls on top of the cheese layer. Push down again, this helps things to start to stay in place.

The last piece to add is the brocolli. I use a small spoon to scoop the florets out and put right in the middle of the dough balls. Again, pat everything down to stick the ingredients together.

Now that all your layers are in place you are going to want to roll them now. As you roll them tuck the ingredients in so they are covered by the dough. Once you roll them completely make sure to squeeze them and put the fold on the bottom so that they don’t unroll in the oven. This dough sticks pretty well so you won’t have too many issues keeping things inside.

Now you have all your little roll ups ready to go into the oven. Make sure to also remove any cheese or pieces that fell out of the rolls so they don’t burn on the tray. Pop them in the oven which is now toasty and leave for about 10 minutes. They will cook quickly and you don’t want to burn them. Once the outside is lightly browned they can come out and cool off.

For a bit more seasoning kick I also dusted the rolls right before they went into the oven. This adds a great taste to the outside of the rolls and makes the dough so delicious.

And VOILA!. This is how they will come out and when you know they are finished. They are pretty filling too so each guest can have 1-2 and feel pretty satisfied. You can also mix this up to include other meats or different veggies or make them vegan friendly too.

And if you want to take it up a notch you can even make a small bowl of marinara sauce for dipping or even a honey mustard as well – just make sure no one double dips 🙂
